Ingredients:
2 cups frozen akpiks (lowbush salmonberries) or blueberries
2 bananas
1 cup Greek yogurt
½ cup coconut milk
¼ cup apple juice
½ cup sugar
Directions:
- Blend all ingredients in a blender or food processor until the mixture reaches a smoothie-like consistency.
- Carefully pour the mixture into a popsicle mold.
- Add popsicle sticks and freeze 4-8 hours or overnight.
- To enjoy, run popsicle mold briefly under warm water for easy removal.
