Ingredients:
3 large potatoes
3 radishes, sliced
3 green onions, diced
1 rib celery, diced
2 hard-boiled eggs, chopped (optional)
½ cup mayonnaise
¼ teaspoon yellow mustard
5 teaspoons white vinegar
5 teaspoons sugar
1 teaspoon dill
½ teaspoon salt
¼ teaspoon black pepper
Directions:
Peel potatoes and cut them into large chunks.
Transfer potatoes to a saucepan. Cover with an inch of cold water and bring to a boil. Reduce heat to medium low. Cover the saucepan with a lid and let simmer until potatoes are fork-tender, about 20 minutes. Drain potatoes and let cool.
In a large bowl, combine the mayonnaise, mustard, vinegar, sugar, salt and pepper. Mix well until the sugar dissolves.
Cube potatoes into bite-sized pieces. Add the potatoes, radishes, green onion and celery to the dressing mixture. Toss until ingredients are coated.
Chill until serving. Optional: Top with diced boiled eggs.
